Sometimes when I make cocktails, I start out with an idea that I want a certain type of profile. For me with this cocktail I started out with the idea that I wanted the basic flavours from early tiki cocktails. I started out with a rum I like and then mixed it in ratios that I had carefully considered. While this is the result of a first attempt it was a good first attempt. A bit on the sweet side it could benefit for a higher ABV rum and slightly more lime. However, this is also a way to start when you tailor a cocktail to your own preferences. It might be a good cocktail to use to experiment with different styles of rum, perhaps switch out half of the rum with an over proof rum instead. Another way would be to use white rum or Jamaican rum or any mixture of all. In my opinion I think somethings like this would make the cocktail more interesting however I leave it here for you to experiment.

When it comes to the taste and flavour of this cocktail, I think it is a bit sweet, as I mentioned earlier. For me, the pineapple was very prominent even though the ratio pineapple to everything else was a bit lower than the Singapore Sling for instance. The other flavour that stands out is the rum, which is as prominent as the pineapple, however, there is not much taste of the alcohol. I would guess that because of this cocktail really needs a rum you like and will be bad to make if you want to get rid of rum you don’t like. In the end, it is quite a nice cocktail albeit simple and I would highly recommend this cocktail, especially if you want to start to experiment with rum and rum cocktails.

My Recipe:

  • 3 oz (9 cl) Aged Rum
  • 1 oz (3 cl) Lime Juice
  • 0.75 (2.25 cl) Grenadine
  • 3 oz (9 cl) Pineapple Juice
  • 2 dashes Angostura Bitters

Add the ingredients to a shaker with ice. Shake to chill and dilute. Strain into a highball glass with ice. Garnish with a lime wheel or a pineapple slice if you have at hand.
